WHere is a home-style version of a beverage found on the seasonal menu. This is a party-sized pre-mixed that's packed full of essence of a Christmas time, rendering it ideal for your holiday party. Reserve the remaining syrup to use in morning drinks, sweets, or to make additional servings of bikinis.
Bikini
Makes enough for 10 servings
To make the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Drink (yields 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
For the Cordial: Place all the components in a saucepan, bring to a simmer, mixing so the sugar melts. Then, remove from the stove and let it to cool entirely. Pour into an sterilised bottle, seal keeping it in the refrigerator, it will last for up to four weeks.
Preparing the Batch Mix: Pour all the liquid ingredients into a large bottle, let it rest for 60 minutes, then filter it , ideally through cheesecloth, making it fully clarified.
When ready to serve: Add 85ml from the batch mix into your cocktail shaker filled with ice, gently stirring lightly for a minute until cold. Pour into an cold coupe glass or similar, garnish with some cranberries and finish by giving it a quick spritz of mandarin oil over the drink.
